Hi every furry and human!! Before I turn today’s post over to my Mom, I wanted you to know that YES, I am once again proud to be an Ambassadog for Rachael Ray Nutrish, (stay tuned, my duties will resume SOON and I have some exciting things up my paw that I will be sharing with you), but this post that Mom is writing today was not sponsored by Nutrish.  My furiends at  Nutrish DID surprise Mom with the cookbook last Fall, however, Mom was under NO OBLIGATION to share it with you. Thanks Dakota! Dakota was correct that the above photo depicts only PART of my Rachael Ray cookbook collection. Also missing from the photo are the boxes upon boxes of magazines with Rachael’s recipes.

As I have stated many, many times on Dakota’s blog, authenticity is important to me. It is a pleasure to write about a person/brand that I have been following since many, many years before I ever began blogging.  I began my Rachael Ray cookbook collection so long ago, that I have no clue what year it was, but I recently found a slip from a book signing that I got up at 4:30 in the morning for, on a FREEZING December day back in 2007 (see slip in photo below), where I stood in line at 5:30 in the morning for at least an hour freezing my butt off,  to claim my wristband for Rachael’s book signing that took place that evening.

I nearly died when I was face-to-face with Rachael as she was signing my book for my husband and I. Normally talkative me was beyond tongue-tied. I could say NOTHING intelligible. So much so that the staff at Borders hurried me through the line like the scene from A Christmas Story where Ralphie is pushed down the slide. My “quiet” husband, suddenly became animated and spoke with Rachael (and she responded!) as if they were the best of friends. Go figure….

So, when I tell you that EVERYONE IS ITALIAN ON SUNDAY is what I consider to be the pinnacle of Rachael’s cookbooks  thus far, I KNOW what I am talking about!

Being a HUGE fan of Asian food, I decided to do something different this time! Reading the recipes in Kung Pao for Pekingese made me sooo hungry, so I decided to make a dish from the book! Here are some of the recipes you will find in Kung Pao for Pekingese:

I did change a few things but the end product came out DELICIOUS!

Spring Rolls with Dipping Sauces

1 scoop shrimp-shelled, deveined, julienned (I was lazy and bought FROZEN COOKED shrimp! I translated 1 scoop as being one cup)

1 scoop lean boneless pork, shredded (I love pork but husband doesn’t eat it, so I left it out)

1 scoop liver (or lamb) dog chow, chopped (I left that out too!)

1 bowl peanut oil (I used 2 tablespoons because I BAKED my egg rolls, I didn’t fry them!)

1 can mung bean sprouts ends removed (bought a can, who knows if they were “mung” and I never removed the ends)

1 egg white beaten (I skipped that)

Salt, sugar, soy sauce (skipped salt because everything is already salty!)

12 spring roll wrappers (I used Nasoya, fewer calories than normal ones!)

I have to say, even with my “tweaks” they were delicious!!!!! I made one of the dipping sauces too, but it came out a little to “ketchupy” for me, that could have easily been my fault!

As is the case with all of the books in this series, it is fun, humorous and the recipes DO work!! NOTE: obviously do NOT feed these recipes to your dog, it wouldn’t be good for them!

Another FUN feature of Kung Pao for Pekingese is that it has a section on Table Manners!!!  Some suggestions are:

  • Always wash your paws before you sit down
  • No bullying little dogs and puppies. Everyone is equal around the dinner table.
  • Drooling IS acceptable. (What better way to flatter your host?)

Prior to Dakota joining our family, I had always been a “cat person, (I still understand cats much better than dogs, but I love Dakota as much as I love our cat, but I digress….) ” Well, I loved dogs too, but hadn’t ever lived with one as an adult, I only had lived with our Boxer (Brandy), when I was a little girl. Our neighbors across the street when I was five years old, had a Shetland Sheepdog named “Dandy.” In my five-year old mind he looked like “Lassie” and I was smitten. I knew that one day I would have a Shetland Sheepdog and in 2007 my wish came true!

When Dakota joined our family it was important to me to feed him delicious food with good ingredients, enter Rachael Ray Nutrish!

Rachael believes  that everyone — even your dog or cat — should be able to enjoy meals made with simple natural ingredients like real meat and wholesome veggies.  I couldn’t agree more!!

One of Dakota’s Nutrish favorites is Chicken Muttballs which has carrots, pasta and spinach:

I thought it would be fun to make chicken meatballs for my husband and I to enjoy the same night that Dakota was eating his Muttballs! I went to the ChefTails website and found an incredibly tasty recipe for :

Chicken and Rice Meatballs

INGREDIENTS

  • 1 cup rice pilaf, cooled
  • 1 1/2 pounds ground chicken
  • 1/4 cup onion, grated—I was lazy and bought chopped onion! Oh yes I did! It worked and was still delicious!
  • 2 cloves garlic, grated—I cheated here too, and bought garlic already chopped in a jar
  • 3 tablespoons parsley, chopped—–I used dry parsley
  • 1 cup grated Parmigiano Reggiano cheese—couldn’t find it at my local market so I used regular grated Parmesan cheese and it was still delicious!
  • 1 egg, beaten
  • Salt and pepper
  • Extra virgin olive oil (EVOO), for drizzling

Notice my Rachael Ray Cutting Board? I love it!!! Also, one thing I have always loved about Rachael Ray is she agrees that recipes are “road maps” It is OK to deviate from the original recipe of pretty much anything that you make, if you have to!

PREPARATION

In a large mixing bowl, combine the rice with the ground chicken, onion, garlic, parsley, Parmigiano Reggiano and egg. Season with salt and freshly ground black pepper.

Flatten out the mixture in the bowl and score it into four portions using the side of your hand.

Shape each portion into five balls — you should have 20 meatballs in total.

Arrange the meatballs on a non-stick sheet pan and drizzle them with EVOO. (Oh no!! I had forgotten to drizzle mine with EVOO I think! But they were still superb!!!)

Place in the oven and bake until the meatballs are cooked through and golden brown, about 10-12 minutes. (The recipe didn’t state at what temperature that the meatballs should be cooked. The “universal temperature is 350 and that is what I did. Mine took much longer to cook, which leads me to think that the oven should have been set at around 400.

I decided to serve our Chicken and Rice Meatballs with my own olive oil roasted red potatoes, roasted cauliflower and a nice green salad:

The dinner was scrumptious!!!!  It was a blast to be eating chicken meatballs right along with Dakota!
